  1. Luke--don't think about "northern food," but think about different cuisines in other regions or neighborhoods. Migration and immigration patterns in Northeastern cities tended to create ethnic pockets in specific communities, which influenced food. The Upper Midwest has a a heavy German & Dutch population, so the diet favored a steady helping of meat-and-potatoes. Other migrations have changed things in other ways....
